Where It All Began
My formative years were spent apprenticing under one of the first Certified Master Chefs in the United States. He trained me in classical cooking technique and ingrained in me a work ethic and drive for excellence. Under his tutelage I developed my palate, practiced my craft, and discovered my passion for delicious and wholesome food.
For twenty-eight years I was the executive chef at The Home Ranch, an original member of the prestigious Relais & Chateau collection, in Clark, CO. Over the years I gained a reputation as the driving force behind “Haute Mountain Cuisine” and also received numerous accolades for our cuisine and for setting the culinary benchmark in the guest ranch kingdom.
At The Home Ranch I discovered my passion for wood fire cookery. We created a Farm Kitchen as the centerpiece of our vegetable and herb gardens along with a large greenhouse. The Kitchen was fueled by wood fire in our brick oven and Argentine Grills. The dining experience that our guests had there was unsurpassed. The satisfaction of cooking at its most fundamental technique drove me to create Clyde’s Pies and bring that culinary experience to you.

Our menu changes frequently in order to source daily market fresh ingredients, purchased the day of our local Farmer’s Market, each Saturday.
The ART of the Neapolita Pizzaiolo has recently been added to the UNESCO list of Cultural Heritage to Humanity and our mission is to deliver the flavor of this traditional craft to you to savor.
