About Our Pies

Our quest to make the perfect pizza begins with:

THE OVEN.  Made by Forno Bravo, the leading wood fire oven manufacturer in Italy, and fueled by Colorado apple, peach and scrub oak wood. The superior design and qualities of the wood enables oven temperatures to reach 700-800 degrees farenheit which is the ideal for Neapolitan pizza.

THE PIZZAIOLO.  The pizza maker who is totally devoted and uses traditional techniques and a wood fire oven.

CRUST.   The most critical component.  We use only “Altima Caputo 00” flour, which is finely milled in Italy and creates a soft, yet strong and flavorful crust.

SAUCE.  Made from San Marzano style tomatoes that offer a slightly acidic but sweet taste. We season modestly with sea salt and snippets of fresh herbs and extra virgin olive oil.
CHEESE.  We use high quality fresh mozzarella along with hand shredded Wisconsin full-fat mozzarella that we call “mutz(mootz)”.
TOPPINGS. Our vegetables, fruits, herbs and meats are sourced as locally as possible from our Colorado and Routt County growers, producers, and ranchers.
