About Our Pies
THE OVEN. Made by Forno Bravo, the leading wood fire oven manufacturer in Italy, and fueled by Colorado apple, peach and scrub oak wood. The superior design and qualities of the wood enables oven temperatures to reach 700-800 degrees farenheit which is the ideal for Neapolitan pizza.
THE PIZZAIOLO. The pizza maker who is totally devoted and uses traditional techniques and a wood fire oven.

CRUST. The most critical component. We use only “Altima Caputo 00” flour, which is finely milled in Italy and creates a soft, yet strong and flavorful crust.
