For twenty-eight years Clyde was the executive chef at The Home Ranch, an original member of the prestigious Relais & Chateau collection, in Clark, CO. Over the years he gained a reputation as the driving force behind “Haute Mountain Cuisine” and received numerous accolades for setting the culinary benchmark in the guest ranch kingdom.
Clyde discovered his passion for wood fire cookery at The Home Ranch after creating an outdoor Farm Kitchen with brick oven and Argentine grills. The kitchen stood at the center of the ranch's vegetable and herb gardens and opened out to beautiful wooden dining tables, giving guest a truly unique and unsurpassed farm to table experience. The satisfaction of cooking at its most fundamental technique drove him to create Clyde’s Pies and bring that culinary experience to you.
Our STYLE is Pizza Napoletana (Neapolitan), which originated in Naples, Italy and is characterized by the ingredients (San Marzano style tomatoes, Italian “00” flour, and fresh mozzarella cheese); the means (a traditional wood fired oven); and the techniques of the “Pizzaiolo”, or pizza maker.
The raised crust is of golden color with specks of oven char, soft to the touch and mouth . We source the highest quality authentic flour, tomatoes and cheese and we purchase ingredients from local growers and ranchers whenever possible. The pizza delivers a characteristic fragrant aroma as it emerges from the oven, and is meant to be eaten immediately
The ART of the Neapolita Pizzaiolo has recently been added to the UNESCO list of Cultural Heritage to Humanity and our mission is to deliver the flavor of this traditional craft to you to savor.
